Power-Packed Granola Cookies

With active kids who are burning more calories than I can keep up with in the kitchen, I am always looking for bite size goodness.  These granola cookies can be customized to suit your taste and provide the kids (and you) with a power-packed treat that will boost their energy.  

They LOVE them (and so do I)....


Cream together:

3/4 C Crisco

1/2 C Brown Sugar

1/4 C Sugar


Add and mix well:

1/4 C Water

1 tsp Vanilla

1 Egg


Then sift together and add to the above mixture:

1 C Flour

1 tsp Baking Soda


Add a combination of your favorites below (chose one of the options below):


Option #1

2 C Oats

1 C of your fave granola


or for a crunchier cookie


Option #2

1 C Oats

2 C of your fave granola


Finally, Add:

1 C Cashews

And a healthy heap of your favorite chocolate chips (optional)


...and feel free to add flaxseed meal or wheatgerm too....


Bake on greased sheet at 350 for 10-15 min.
